There are two pin properties on symbols in Capture. The "pin number" and also a "pin name". Not sure what your color setup might be, but typically the "pin number" is in black and shown outside symbol graphic. The "pin name" is typically blue and shown inside the symbol graphic. The "pin name" is text, but can also be just a 1,2,3 etc. depending on where you got the symbol/library and who designed it. Perhaps that is what you are looking at?
You can try the same edit on "Pin Names Visible" property and see if that makes them dissappear.
As for the greyed out "edit part", sounds like you may have it already open in the editor window? If so, when you try to select it again in your schematic window, it will not be available.
Otherwise, I'm a long time user of the full versions. I am not familiar with the limitations imposed by the "Lite" version. If you care to upload your "dsn" file here, I can take a look.
